Foodie Fun: Salsa with Avocado!

Like Lauren said in her guacamole post, we've GOT to have a few avocado recipes added in here! And it just so happens that Lauren's guac pairs wonderfully with this salsa recipe. Now I wouldn't exactly say that two girls raised in South Louisiana are the experts on salsa recipes, but since moving to Texas a year and a half ago, I've been on the hunt for great salsa!

Luckily, I didn't have to look further than my own home. Turns out, my boyfriend's grandmother has an AMAZING salsa recipe that he's perfected over the last few years. His grandfather was from Mexico, so it's got to be legit, right??

We've vetted this recipe with all kinds of people. It's our go-to "what to bring" for pool parties, house hang outs, or just when we want snack at the house. Everyone loves it. I honestly can't even say how long it'll keep because we've only had leftovers like once... It's THAT good.

It's the perfect combination of a bomb of garlic, heat from the Serrano, cilantro-y goodness, and a little creaminess from the avocado. Yes, there's avocado in salsa. It's the last ingredient you add, and just pulse a little bit to mix it in.

This is a recipe that you can adjust to fit your needs. It easily doubles or triples. Really love garlic (like us)? Add another clove. Serrano's extra spicy? Only use half of one. It's perfect to adjust to meet the tastes of your audience. We typically add in extra garlic and cilantro because clearly we want people to smell us from a mile away.

Be sure to eat, enjoy, and share with your friends. They'll be obsessedddddd!!!

Tried and True Salsa with Avocado
Makes about 4 cups salsa

  • 1 can (16 oz) stewed tomatoes
  • 1/3 cup red onion
  • 1/3 cup cilantro (about a plum sized cut from the bunch)
  • 1-2 tsp salt (add in until desired amount)
  • 3 cloves garlic
  • 1 Serrano pepper
  • 1 avocado

Add all ingredients except avocado into a food processor. Mix under blended.
Taste test, adjust according to taste. Once satisfied, add in avocado (it will tone down the spice slightly).
Mix just enough to break up avocado into small bits.
Enjoy!!
