Garlic and Rosemary Artichoke Balls Appetizer Recipe

Don't you just love appetizers? Chips and dips, fried vegetables, breads and cheeses, and small bites! They're all so wonderful!

Wouldn't you be happy with just ordering a few apps at a restaurant and then going straight to dessert? Is that just me? Clearly I have a major app love. Do you? Even if you don't, these garlicky artichoke balls make a perfect side dish for dinner, topped on salads, or just as a quick snack. Hot or cold, they work both ways! I can attest to all options.

This recipe comes from Lauren and I's grandmother, and they're always a big hit! These little popable bites are great and packed with flavor! The ingredients are inherently simple- artichokes, garlic, breadcrumbs, eggs for binding, and Parmesan cheese. I added some rosemary also for an extra kick of herb-y flavor!

They're also quick- less than 10 minutes needed from the grabbing your ingredients to putting them in the oven. Then another 5-10 for baking, and you've got yourself a great new treat for your friends!

Artichoke Balls
Makes 18 1" balls

1 can artichoke hearts
1 cup bread crumbs
2 tbsp Parmesan cheese
2 eggs
6 tbsp olive oil
4 cloves garlic
1 sprig rosemary

Preheat oven to 350 degrees.
Mash artichokes (I used my Nutrabullet to make it more of a mush).
Combine all ingredients.
Form into 1" balls and cook for 5-10 minutes, until golden brown.
Can be served hot or cold.


  1. Sounds really good! We do bacon-wrapped artichoke hearts for parties, so of course I'm going to have to try these (maybe even wrapped with bacon, because why not?!).

    1. Oh for sure! Either bacon wrapped, or cook down bacon, cut it up, and mix it in!
